PREFACE
Bhojana Kutūhala, the present publication, is a work
of very great value, both as a treatise on dietetics and as a
work bearing on some aspects of Āyurveda. It contains
invaluable information about several articles of food, and
incidentally the diet that was prevalent during the period,
viz 17th century. A perusal of the contents of the book
will convince any one of the importance of this work.
Its author is Raghunātha Gaṇeśa Navahasta, a
Mahrāṭṭa scholar who flourished in the 17th century A D.
He was a friend of saint Rāmdās and enjoyed the patronage
of Queen Dīpa Bai, wife of Ekoji Bhose of Tanjore. A few
facts about his life and works are given in the succeeding

We have in our collection two manuscripts (Nos.
P I No 1020 and 1021) of the treatise, and in view of the
importance of the work, we took up the responsibility to
bring out an edition In editing the work we have taken ad-
vantage of collating our manuscripts with the manuscripts
of the Sarasvatimahal Library, Tanjore, and the Research
Institute, Poona.
Our thanks are due to the authorities of the Sara-
svathimahal Library, Tanjore and Bhandarkar Oriental
Research Institute, Poona. We are grateful to Prof: P. K.
Gode of the Research Institute, Poona, for his good offices
in securing a manuscript. We have also been greatly bene-
fited by his contributions on Raghunātha in the issues of the
Journal of the University of Bombay, September 1491,

A NOTE ON BHŌJANAKUTŪHALA
The Bhojanakutūhala is a rare and valuable work
compiled from various sources by Sri Raghunātha Sūri. The
name Bhojanakutūhala (curiosity for food) is appropriate
for this work, as it deals with the characteristics, method
of preparation, purification etc of the dietetic materials The
work is in three parts, the present publication being the
first part This part deals with the properties of the differ-
ent food materials (such as grains like wheat and paddy,
liquids like milk and curd), the methods of preparing
different dishes, and their digestive effects. In the two suc-
ceeding parts are discussed the subjects of edibles and
non-edibles, purification of food etc
The work draws its material from old treatises like
Suśruta, Bhāvaprakāśa, Manusmṛti and Vātsyāyana Sūtra.
This has been stated by the author himself in the following
verses:
“ इत्थं विमथ्य गुणपाठसुधाम्बुराशिं
लब्
ii
भेषज्यतन्त्रमपि नैव कृतं स्वतन्त्रं
तेषां कृतेऽपि•चं. कृतं रघुनाथनाम्ना ॥
etc., we know that the author of the work is Raghunātha
Sūri. From the colophon of another work of this author by
name Prayogaratnabhūṣā 'इति श्रीमद्धरिहरमहात्मजरघुनाथसुतगणेश-
भट्टतनुज ............ देवीयरघुनाथोन्नीतकूतौ श्रौतप्रयोगरत्नभूषायां पुण्याह-
•वाचनादिपिण्डपितृयज्ञान्तो रत्नगुच्छः', it is seen that this
Raghunātha was the son of Gaṇeśabhaṭṭa, grandson of
Raghunātha and great-grandson of Harihara Bhaṭṭa, though
there is a lacuna between गणेशभट्टतनुज and रघुनाथोन्नीत in
the manuscript. There are several statements in the
works of the author to the effect that he belonged to
Anantadeva, for eg. अनन्तदेवीय, अनन्तदेवोदय, अनन्तदेवदत्तोदय,
अनन्तदेवदयात्मज. These, especially अनन्तदेवदयात्मज would seem
to indicate that the author's father was Anantadeva. But
this is in contradiction to the statement noticed above.
Moreover, Anantadeva is frequently spoken of by the
author as his Guru and the son of Āpadeva and grandson
of Anantadeva. Anantadeva therefore, cannot be the
author's father; he was in all possibility his Guru, and the
statements may be taken as indicative of his extreme regard
for him.
From certain letters of Saint Rāmdas addressed to
Raghunātha† we know that he belonged to the Vasiṣṭha
'अवादीद्यमनन्तेन गुरुणा करुणाब्धिना ।'
'इति श्रीमत्सकलभूमण्डलमण्डनायमानश्रीमदनन्तदेवात्मज-श्रीमदापदेव-तत्सुत-
श्रीमदनन्तदेवदयोदयस्य रघुनाथार्विदुषः कृतौ धर्मामृतमहोदधिनिबन्चने
गोदानविधिः ''
इति श्रीमद्वारिधिवेलावलायितेलावलयवर्ति-विद्वन्मण्डलीमण्डनायमान-श्रीमदन-
न्तदेवोदयस्य रघुनाथविदुषः कृतौ प्रायश्चित्तकुतूहले ... ...'' etc.

gōtra and to the Karhade sect among the Mahraṭṭas. His
family surname was ‘Navahasta’ (corrupted in popular
tongue as Navatha and Navathye) as can be gathered from
the colophons in some of his works like इति ......
चातुर्मास्यप्रयोगो रघुनाथनवहस्तकृतः and नवहस्तरघुनाथभट्टविरचित-
प्रायश्चित्तप्रकरणं समाप्तम् । In his Prāyaścittakutūhala, Raghu-
nātha speaks of God Viṣṇu as his family deity:
अनेन प्रीयतां देवो भगवान् कमलापतिः ।
श्रीमदनन्तः पूर्वेषाम्माकं कुलदैवतम् ॥
Raghunātha’s teacher Anantadeva whose genealogy we
noticed above is believed to have lived between 1625 and
1675 A D. He was a versatile scholar and prolific writer
and was a descendant of the great Mahraṭṭa Saint Ekanātha.
His father Āpadeva was the famous author of the Mīmāṁ-
sānyāyaprakāśa.
Raghunātha was intimately associated with the
Mahraṭṭa Saint Rāmdas, the preceptor of Śivāji the Great.
He was for a long time put in charge of the temple of
Raghupati, built by the Saint at Chafol on the Man, a tribu-
tary of the river Kṛṣṇā
The author appears to have settled at Tanjore when
a Mahraṭṭa kingdom was established there in 1678 by Ekoji,
for in some of his Mahraṭṭi works like the Narakavarṇana
he speaks of Dīpāmbikā, Queen of Ekoji as his patroness
Besides the Bhojanakutūhala Raghunātha has written
several other works in Sanskrit and Mahraṭṭi. Among the
Sanskrit works may be mentioned the following: —
- Sāhityakutūhala — a work on Citrakāvya
mentioned in the Narakavarṇana of the
author, but no MS is known.

2. Prayaścittakutūhala — on expiatory rites.
' 3. Janārdanamahodaya — a manual on Vaiṣṇava
ritual and worship
4 Dharmāmṛtamahodadhi — an extensive com-
pilation on religious and social law and
customs
5 Kāśīmīmāṁsā — No MS. is known.
6. Prayogaratnabhūṣā — an exhaustive work on
Vedic ritual.
7. Cāturmāsyaprayoga — on the Vedic ritual
pertaining to the Cāturmāsya sacrifices.
Among the Mahraṭṭī works may be mentioned the
following:—
1 Narakavarṇana
2 Govardhanoddhāraṇa
3 Strīdharma
In the Narakavarṇana mention is made of all the
works except Prayogaratnabhūṣā and Cāturmāsyaprayoga.
These two as also some of the other works are mentioned
by the author in certain other works like the Prāyaścitta-
kutūhala *
- “अतश्च न शाकव्रतादौ द्रव्यमात्रत्यागः इत्यस्मत्कृतजनार्दनमहोदये विस्तरेण
प्रपञ्चितम् ।” ( भोजनकुतूहलम् )
“एवं भोजनविषये विशेषप्रायश्चित्तानि विशेषतो भोजनकुतूहले निरूपितान्य-
स्माभिस्तत एवावगन्तव्यानि ग्रन्थगौरवभयान्नात्र निरूपितानि ।
“तस्याः प्रयोगः प्राप्तकाले दर्शपूर्णमासयोरनारम्भनिमित्तं क्रियमाणप्रायश्चि-
त्तार्थम् अन्वारम्भणीयेष्ट्या यक्ष्य इति सङ्कल्पास्मत्कृतप्रयोगरत्नभूषायां
दर्शपूर्णमासप्रकरणे गोचर इति नेह पुनर्लिखितः”
पक्षहोमविधिह्यस्मत्कृतहोमप्रयोगे द्रष्टव्यः । Homaprayoga may probably
be the Caturmasyaprayoga.

For MS. of the works of Raghunātha vide ‘Raghunātha and his
works in the Journal of the Bombay University, (Vol. x, 1941)
• A manuscript of Prayogaratnabhūṣa dated Śaka 1600
(1678 A. D.) is stated to be available in the Oriental Insti-
tute, Baroda. • Prof. Gode speaks of a manuscript of
Bhojanakutūhala produced about 1682.* This gives some
clue to fix his period. Ekoji, the husband of his patroness
Dīpa Bai reigned between 1676 and 1683. The Dharmā-
mṛtamahodadhi contains a chronogram giving the date of
its composition to be Śaka 1623 (1701 A. D.). † The
literary activity of Raghunātha may therefore be assigned
to the period 1650 to 1725 A. D.

साम्बमीशमभिपूज्य तत्पदे वाक्प्रसूमाञ्जलिरसौ समर्पितः ।
तेन तुष्यतु स भक्तवत्सलः कोसलाधिपसुतायुतो हरिः ।
भोजनकुतूहले
वृक्षाद्युपजीवनं भोगः जीवसाधनं, 'ओषधीभ्योऽन्नम् । अन्नात्पुरुषः।'

तच्च तावत्त्रिधा ज्ञेयं शूकशिम्बीतृणाह्वयम् ।¹
व्रीह्यादिकं यदिह शूकसमन्वितं स्यात्
तच्छूकधान्यमथ² मुद्गमकुष्ठकादि ।
शिम्बीनिगूढमिह तत् प्रवदन्ति शिम्बी-
धान्यं तृणोद्भवमथो तृणधान्यमाहुः³ ॥
इति । तत्र—
शूकोद्भवं लघु बलातिशयप्रदायि
मेध्यं त्रिदोषशमनं रुचिवीर्यकारि ।
शिम्बीभवं गुरु हिमं च विबन्धकारि
तद्वातलं तु शिशिरं तृणधान्यमाहुः ॥
गुरु दुर्जरम् । उक्तं च भावप्रकाशे—
मन्दानलो नरो द्रव्यं मात्रागुरु विवर्जयेत् ।
स्वभावतश्च गुरु यत् तथा संस्कारतो गुरु ॥
मात्रागुरु तु मुद्गादि माषादिः प्रकृतेर्गुरुः ।
संस्कारगुरु पिष्टान्नं प्रोक्तमित्युपलक्षणम् ॥ इति ।

शालयो मधुरा स्निग्धा बल्या बद्धालपवर्चसः ।
कषाया लघवो रुच्याः स्वर्या वृष्याश्च बृंहणाः ॥
अल्पानिलकफाश्शीताः पित्तघ्ना मूत्रलास्तथा ।
शालयो दग्धमृज्जाताः कषाया लघुपाकिनः ॥
सृष्टमूत्रपुरीषाश्च रूक्षाः श्लेष्मापकर्षकाः ।
कैदारा वातपित्तघ्ना गुरवः कफशुक्रलाः ॥

अथ शालिविशेषगुणाः । राजनिघण्टौ —
राजात्नं तु त्रिदोषघ्नं सुस्निग्धं मधुरं लघु ।
दीपनं बलकृत्पथ्यं कान्तिदं वीर्यवर्धनम् ॥
महाराष्ट्रेषु रायभोगः इति; राजाभामित्येवान्ध्रेषु प्रसिद्धम् । राज-

कृष्णशालिस्त्रिदोषघ्नो मधुरः पुष्टिवर्धनः ।
वर्णकान्तिकरो बल्यो दाहजिद्दीर्यवर्धनः ॥

सदा सेव्यस्सर्वैरनलबलवीर्याणि कुरुते ॥

सूक्ष्मशालिस्तु मधुरो लघुः पित्तास्रदाहनुत् ।
दीपनः पाचनश्चैव किञ्चिद्वातविकारजित् ॥

सुगन्धशालिर्मधुरोऽतिवृष्यः पित्तभ्रमास्रारुचिदाहशान्तिदः ।

व्रीहिर्गौरो मधुररसकः पित्तहारी कषायः
स्निग्धो वृष्यः कृमिकफहरस्तापरक्तापहश्च ।
पुष्टिं दत्ते श्रमशमनकृद् वीर्यवृद्धिं विधत्ते
रुच्योऽत्यन्तं जनयति च मुदं वातकृन्मेचकोऽन्यः ॥
गौरशालिः, हरिद्र इति प्रसिद्धः ।
वाग्भटस्तु—
रक्तो महान् सकलमस्तूर्णकः शकुनाहृतः ।
सारामुखो दीर्घशूको रोद्धशूकः सुगन्धकः ॥
पौण्ड्रकः पुण्डरीकश्च प्रमोदो गौरशालिकः ।
लाङ्गलो लोहवालाख्यः कर्दमोऽशीतभीरुकः ॥

शूकजेषु वरस्तत्र रक्तस्तृष्णात्रिदोषहा ॥
महांस्तस्यानुकलमस्तं चाप्यनु ततः परे ।
यवका हायनाः पांशुवाष्पनैषधकादयः ।-
स्वादूष्णा गुरवः स्निग्धाः पाकेऽम्लाः श्लेष्मपित्तलाः ॥
सृष्टमूत्रपुरीषाश्च पूर्वं पूर्वे च निन्दिताः ॥
स्निग्धो ग्राही लघुः स्वादुस्त्रिदोषघ्नः स्थिरो हिमः ।
षष्टिको व्रीहिषु श्रेष्ठो गौरश्चासितगौरतः ॥
ततः क्रमान्महाव्रीहिकृष्णव्रीहिजतूमुखाः ।
कुक्कुटाण्डकलावास्यपारावतकसूकराः ॥
वरकोड्डाकौद्दालचीनशारददुद्देराः ।
गन्धनाः कुरुविन्दाश्च गुणैरल्पान्तरास्स्मृताः ॥
स्वादुरम्लविपाकोऽन्यो व्रीहिः पित्तकरो गुरुः ।
बहुमूत्रपुरीषोष्मा त्रिदोषश्चैव पाटलः ॥ इति ।
रक्तो लोहितः । महान् महातण्डुलः कलमः , अन्तर्वेद्यां कल-
बीति प्रसिद्धः । तूर्णकश्शीघ्रपाकी , आश्वयुज इति काश्मीरे प्रसिद्धः ।
शकुनाहृतः गरुडापरनामा । उक्तं च—
द्वीपान्तरात्समानीतो गरुडेन महात्मना ।
शकुनाहृतशालिः स्यात् गरुडापरनामकः ॥ इति ।
सारासुखः कृष्णशुक्लाकारतण्डुलः । दीर्घशूकः अत्यायतशूकः ।
रोध्रशूको रक्तशूकः । सुगन्धकः गन्धशालिः । पौण्ड्रकः पाण्डुरशालिः ।
पुण्डरीकः श्वेतोत्पलकः । प्रमोदकः प्रह्लादकः , कमोद इति प्रसिद्धः ।
गौरशालिकः हरिद्रः । जाङ्गलः सीरकृष्टभूमिजः । लोहवालः अति-
कठिनतण्डुलः । कर्दमः पङ्कजः । शीतभीरुकः शीतमात्रनिष्पन्नः ।

श्शुक्रश्लेष्मविवर्धना रुचिकराः सन्दीपनास्तर्पणाः ।
पथ्यास्सर्वगदे हिताः श्रमहराः क्षुत्तृट्श्रमध्वंसिनः
श्रेष्ठा व्रीहिषु पाष्टिकाः कलमका रक्ता महाशालयः ॥ इति ।
नीवाराणां व्रीहिवर्गे पाठमाह प्रयोगपारिजातः । वाग्भटस्तु
तृणधान्यवर्गे । तत्र पूर्वस्यावयवसाम्यमुत्तरस्य गुण साम्यं पाठहेतुः ।
गुणाश्च-
कषायमधुरो रूक्षो नीवारः कफपित्तहृत् ।
ग्राही लघुर्बलहरो मुनीनां देहधारकः ॥

अथ गोधूमाः ।
वाग्भटः -
वृष्यश्शीतो गुरुः स्निग्धो जीवनो वातपित्तहा ।
सन्धानकारी मधुरो गोधूमः स्थैर्यकृत्सरः ॥
राजनिघण्टौ -
गोधूमः स्निग्धमधुरो वातघ्नः पित्तदाहकृत् ।
गुरुः श्लेष्मप्रदो बल्यो रुचिरो वीर्यवर्धनः ॥ इति ।
स्निग्धोऽन्यो लघुगोधूमो गुरुर्वृष्यः कफापहः ।
आमदोषकरो बल्यो मधुरो वीर्यपुष्टिदः ॥
